Ingredients

  • 2 cupscooked brown basmati
  • 1/4 cupfresh lemon juice
  • 1/3 cupextra-virgin olive oil
  • 1garlic clove, minced
  • 1 tspfresh oregano, minced
  • 1/4 tspcracked black pepper
  • 1/2 tspsea salt
  • 1/8-1/4 tspred pepper flakes
  • 2 cupsfresh spinach leaves, chopped
  • 1red bell pepper, diced
  • 1small cucumber, peeled and seeded
  • 1/2 cupgreen onions, chopped
  • 1/2 cupKlamath olives, chopped
  • 1 cupfeta cheese, crumbled

Steps

  1. 1

    In a large bowl, combine lemon juice, olive oil, garlic, oregano, black pepper, red pepper flakes, and sea salt. Whisk together.

  2. 2

    Add rice to dressing and toss to combine. Add remaining ingredients and toss.

  3. 3

    Serve at room temperature or chill in refrigerator for up to 2 hours.
