Stir-Fried Chicken with Scallions - Spicy and Tender, Perfect with Rice

After a year, I cooked this dish again. It was one of the rare successful dishes I made when I first started learning to cook last year. It's easy to make and delicious. I switched from chicken breast to boneless chicken thighs for a more tender texture. I've also adjusted the steps and seasoning to suit my cooking habits, and it's still tasty. Every time I remake an old dish, it brings back memories. It's been a year since I started cooking, and I'm happy to see my growth in cooking and photography. :)

Cooking Instructions

Heat a pan and place the chicken skin-side down. Cook until the chicken fat is rendered and the surface changes color, then set aside.

In the same pan, add minced garlic and sauté until fragrant.

Add the scallion sections and stir-fry until aromatic (reserve some green parts for later).

Return the cooked chicken pieces to the pan and continue stir-frying until fully cooked.

Add the mixed seasoning sauce and bring to a boil, allowing the chicken to absorb the flavors.

Cook the sauce until it reduces, then add the reserved scallion greens and chili pepper. Stir-fry until well combined, and it's done.

After a year, I've adjusted the cooking steps and seasoning to my liking. It's amazing how cooking has become a part of my life, making it more fulfilling and joyful (so touching, I'm crying, another year older). I hope to continue this journey, and by this time next year, my cooking skills will be even better. :)
