Spicy Puffed Rice | Murmura Chivda | Khara Mandakki

Vana mandalu oggarane, khara mandakki, mandakki chivda, spicy puffed rice, seasoned puffed rice, masala puffed rice, spicy kadlepuri or bellulli (garlic) mandakki is a popular teatime snack from North Karnataka. It is made in several variations across India and known as sukha bhel, bhadang, murmura chivda and many more names. It is the perfect guilt free snack to munch on any time of the day. Garlic adds a very interesting flavour to the mandakki. I often find myself hunting for them, so add garlic generously. My mom makes big batch of this delicious snack and store for upto 2 weeks. My hubby likes to munch on some snack irrespective of whatever time he returns from office. I usually make a big box full of avalakki chivda since my hubby loves avalakki in any form. For a change, I made mandalu oggarane today and he happily munched on it while I was still rolling jolada rottis for dinner.

Ingredients

Makes 500gm
  • 300 gmPuffed rice
  • 1/2 cupOil
  • 1 tspMustard seeds
  • 1 tspCumin seeds
  • 1/4 tspAsafoetida
  • 2 stalksCurry leaves
  • 5Whole red chillies - broken in half
  • 1/2 cupRoasted split chana
  • 1/2 cupPeanuts/Almonds
  • 15 clovesGarlic - crushed with skin
  • 1 tspRed chilli powder
  • 3/4 tspSalt
  • 1 tbspSugar OR
  • 2 tspSugar powder

  1. 1

    In a small kadai, heat oil on medium flame. Add mustard seeds & cumin seeds. Allow to splutter. Lowder the heat and add curry leaves, whole red chillies & asafoetida.

    Add the roasted split chana and almonds. Traditional recipe is made uusing peanuts. Due to dietary constraints of my family, I substitute it with almonds. You may chose either one of them.

    Saute until fried gram is slightly golden brown and almonds start swelling and cracking up slightly.

    Turn off heat. Add the crushed garlic. Heat of the oil is enough to cook the garlic.

    Add red chilli powder. Mix well.

    Pour the seasoning over the puffed rice. Add salt & sugar.

    Mix well on low heat so that the puffed rice becomes crispy & crunchy. Check the spices and adjust according to your taste.
