First, bring water to a boil. While waiting, shred the carrots, tofu, and pork. If using dried wood ear mushrooms, soak them the day before.

Once the water is boiling, add all the ingredients and cook together.

Season with some black peppercorns, soy sauce, and oyster sauce.

After thickening with the cornstarch mixture, add the beaten eggs, more black pepper, and sesame oil. Boil on high for 10 seconds, then turn off the heat.

Finally, add Chinese black vinegar to taste and sprinkle with chopped green onions if desired.
