As a crazy busy Chef - I'm ALL about the easy! Nope! No, "stuck up," culinary part about me whatsoever!

Anywho, 2 of my 8 year old students have dad's with terrible head colds who couldn't wait for a hot, tummy soothing supper tonight. With that, my youngest students independently decided to go with super easy, super quick Southern Comfort Food 101! Seriously, if you were born in the 60's,70's and 80's - this was the juicy meatloaf recipe you were raised on and you'll certainty remember it!

Yuppers! Juicy mini meatloaves, sweet, crispy, seasoned buttered corn, creamy mashed spuds and a thick brown gravy dinner Great job kiddos!

Just remember, there's NOTHING wrong with a delicious pre-fabed dinner! Ever! Especially if it's comforting to those who are beyond hungry and terribly sick who want something soothing and hot! It's all about the love folks! Always keep in mind - if someone wants to feed you - someone wants to love you!

Ingredients

  1. ● For The Mini Meatloaves
  2. 1 Pound80/20 Hamburger Meat
  3. 1LG Egg
  4. 1/2 CupWhole Milk
  5. 1 CupItalian Bread Crumbs
  6. 1/2 CupDiced White Onions
  7. 1/2 tspSalt
  8. 1/2 tspFresh Ground Black Pepper
  9. 1/2 PacketMcCormick Meatloaf Seasoning
  10. ● For The Mashed Potatoes
  11. 1Tray Bob Evans Mashed Potatoes [the best OTC brand out there!]
  12. 1 PacketMcCormick Brown Gravy [+ 1 cup water]
  13. as neededSalted Butter
  14. ● For The Garnishes
  15. as neededFresh Parsley
  16. ● For The Corn
  17. 1 CanWhole Kernal Corn
  18. 2 tbspSalted Butter
  19. as neededDried Parsley
  20. 1/2 tspDried Rosemary
  21. as neededSea Salt
  22. as neededFresh Ground Black Pepper

Cooking Instructions

  1. 1

    Mix everything well in the meatloaf section and compact in mini meatloaf pans. Avoid any air pockets and press down hard. Feel free to add ketchup to the tops in the last 10 minutes of baking.

    Bake mini meatloaves at for 45 minutes at 350°.

    Heat corn in microwave with all seasonings for two minutes.

    Let loafs rest for 5 minutes before pulling and slicing.

    Place loaves on a thick bed of mashed potatoes with butter and brown gravy. Garnish with fresh parsley and ground black pepper. Serve with hot buttery corn. That's it! Enjoy your super delicious easy!
