Cooking Instructions

Combine flour, sugar, cinnamon in a bowl.

Whisk egg, milk, oil & mashed bananas in a med bowl.
- 3
Add to the dry ingredients bowl along with the frozen blueberries and stir until just combined. (DO NOT OVERMIX)

Line your muffin pan with paper cases and scoop the mixture amongst the cases.

Into a preheated oven bake for 20-25mins or until the skewer comes out clean.
- 6
Allow the muffin to cool and serve

I walked into the kitchen and saw the bounty of bananas slowly degenerating and was determined not to let them go to waste. Now I'm not a fan of baking but I thought why not try my hand at a simple banana bread recipe. It came out successfully and i really enjoyed it. It wasn't too sweet and the banana was not overpowering as it can be sometimes. It had a nice texture although nuts would've been a great addition. I also added a honey ginger glaze left a nice taste in my mouth too. I'll definitely be trying this again.elroy.galbraith
