Ingredients

  1. 3eggs
  2. 1/2turmeric
  3. Salt and pepper
  4. Masala stuffing
  5. 1garlic (minced)
  6. 1/2onion (thinly slice)
  7. 1tsb garam masala
  8. 1/2tsb ground turneric
  9. 1/2 teaspoonground cumin
  10. 1tsb chilli powder (or cayenne pepper)
  11. 1green chilli (finely chopped)
  12. 1/2 tspchilli flakes
  13. Salt and pepper
  14. 1 handfulcoriander (chopped)
  15. 1 tbspcooking oil or ghee

Cooking Instructions

    Making masala stuffing. On medium heat pan, add cooking oil then onion and stir well until onion soften up. Add your spices, chilli, chilli flakes and mix well. Add some finely chopped coriander, season it with salt and pepper and mix well. Transfer to a bowl.

    Beaten the eggs and seasoning with salt and pepper.

    Add about 1/2 tsb of turmeric in the egg mix. Stir well (you can use sieve to pass the bit of the egg). On medium heat, add a tiny bit of oil and wait until the pan hot. Pour you eggs into the pan. Note* non stick pan is much preferable to use.

    Add your spicy masala stuffing on top of your omelette (just half area)

    Fold the other side in. You can garnish with some more coriander before serve 😋
