Another great porridge recipe to enjoy in the morning sunshine. My Banana Bread Porridge is deliciously creamy and sweet from the bananas with some crunch from the almonds. If you want to sneak in some veggies - some peeled grated zucchini can be added at the beginning which cooks down to look like banana! I’ve added a great caramelised banana topping if you want a treat! #breakfastinspo #breakfastideas

Ingredients

1 serving
  1. 40 gporridge oats
  2. 180 mlmilk/water
  3. Semi-skimmed or dairy free (Almond works well)
  4. 1large banana: ½ mashed and ½ sliced (if want caramelised bananas)
  5. 2 tspmaple syrup/honey
  6. 1/4 tspcinnamon
  7. 1/2 tspvanilla extract
  8. Pinchsalt
  9. Small handful of chopped almonds
  10. To serve
  11. Small handful toasted flaked almonds
  12. Caramelized bananas

Cooking Instructions

    Heat the oats, milk/water, mashed banana, chopped almonds, cinnamon and vanilla in a saucepan over a medium-low heat.

    Cook for 5 minutes until the oats are cooked and the texture is as desired (add more milk if you want it thinner).

    Whilst the porridge is cooking, cook the caramelised bananas. In a non-stick frying pan, place the sliced bananas and cover with the maple syrup. Cook over a medium heat, flipping gently occasionally, until golden brown and soft.

    Pour into a bowl and serve with the toasted flaked almonds and a dash of honey/maple syrup if desired.
