Cooking Instructions

INSTRUCTIONS
Combine the lentils and water in a large pot. Bring to a boil, then turn the heat down to simmer. Skim off any foam that collects on top. Cook, partially covered, until the lentils are tender, usually 15-20 minutes. - 2
While the lentils are cooking, make the tadka. Heat a skillet over medium heat and add the oil and onion, garlic, ginger, chiles, and a pinch of salt. Fry until soft, about 5 minutes.

Add the spices: curry powder, mustard, coriander, and cumin, along with the salt. Stir to combine and cook for about 60 seconds, then add the tomatoes.

Cook about 7 minutes to cook down the tomatoes if canned, or until the tomatoes are soft and saucy if fresh. Add lemon juice.
Add the tadka to the cooked lentils, and simmer over low heat for about 5 minutes to infuse with flavor.
Serve garnished with cilantro and with basmati rice.

Honestly, I am not the biggest fan of Chicken Mole, but my wife loves it. For Cinco de Mayo, I decided to make this dish for her. I immediately found out that when it is made fresh at home, it is so much better than what you get it at the restaurants.But please, please, please do not make the same mistake that I did with the recipe. A lot of recipes called for 4lbs of Chicken, but that seemed to be too much to us. We decided to halve the recipes that we found. We did that with everything, EXCEPT the chiles. Holy cow, that was Hot!We added more chocolate, so it was salvaged somewhat. Do not worry, this recipe has the right amount. If you like your food really hot, then just double the chiles. Though it's often made with some kind of red bean or pigeon peas, we had black beans in the cupboard, so I used those.Though turmeric is not a typical ingredient as far as I know, it adds an appealing natural yellow color, a barely detectable flavor in small quantities, and has great health benefits, so I often add turmeric to flavored rice dishes.Many Rice and Peas recipes include thyme, a Scotch Bonnet or Habanero chili, and sometimes even a little bit of allspice, which makes for a delicious standalone rice dish.But for me, in the case of something as hot, spicy and complex in flavor as Jamaican Jerk Chicken, the overall meal is enhanced by a simpler version of Rice and Peas with a mild savory note from a little onion and garlic, and the creamy offset to all that heat from a little bit of coconut milk.If you disagree, it's easy enough to add those herbs and spices back in. :) x
