Vanilla cupcakes

This recipe uses oil instead of butter or margarine, so it's really convenient for me as vegetable oil is something I always have on hand. It also gives cupcakes that moist effect we love so much.

Cooking Instructions

Preheat oven to 175°C and spray or line your muffin tin with muffin cases.

In a bowl of your mixer mix sugar and oil till well blended.

Add one egg at a time and mix well
- 4
Add vanilla essence
- 5
Sift and mix in the flour
- 6
Add milk and mix in till well mixed, don't overmix
- 7
Pour into muffin tin, 3/4 full. I did mine almost full because my cases are lower than the muffin holes

Bake for 18-20minutes or till a toothpick inserted in the centre comes out clean.
