Fresh Spring Rolls with a Delicious Sauce
I love fresh spring rolls but I'm not too fond of sweet chili sauce...so I combined my favorite seasoning ingredients to make this delicious dipping sauce.Even people who don't like vegetables will eat them served like this, so it's a great way to try out all different sorts of vegetables. When rehydrating the wrappers, it's best if you take them out while they are still a bit firm, since the moisture in the wrapped vegetables will soften them some more and make them just right. If they are still too hard try spraying them with water using a mister or spray. You can also try lightly brushing some water on them. Recipe by Taberunba

Basic Homemade Tomato Sauce
10 years ago, I heard Chef Ochiai (a celebrity chef in Japan) saying that if you roast whole vegetables, you can really bring out their umami and fragrance to make a rich sauce! And that you could store the sauce in the refrigerator! I've been making my own version at home and keeping it on hand since then. When sautéing the aromatic vegetables, brown them properly in order to make a rich tasting tomato sauce. Then, just simmer! Since the aromatic vegetables are removed, I could keep the sauce in containers sterilized with boiling water for more than a month in the refrigerator. You can use this sauce on pasta, on sautéed chicken, in egg dishes and all sorts of recipes. Recipe by kebeibiko

Oyster and Spinach Gratin with Soy Milk and White Miso Sauce
This gratin with Japanese sauce is a family favorite. Miso and cheese are both fermented foods, and they go really well together. I like adding soy milk to this sauce, instead of milk. I thought about the nutrients that are beneficial for the body during winter, like iron, for instance, which strengthens the immune system. And that's how I came up with this recipe.Cook the oysters thoroughly in Step 4 to prevent them from being undercooked.I removed the skin from the salmon for children, but you can cook it with the skin still on.The sauce made with rice flour doesn't form lumps, so you can make this sauce without fail. Packed with Nutrients - Our Homemade Style Spinach with Tofu Sauce
Since tofu sauce has a lot of nutrition, I wanted to optimize it even more while preparing the vegetables.Carefully press out all the excess water from the tofu.I avoided parboiling the spinach and carrots to preserve the nutrients as much as possible. If the taste is a bit weak, add a touch of miso. For 2 to 3 servings. Recipe by *Anna*

Delicious Yakisoba with Powdered Sauce
This is a method to make yakisoba with powdered sauce, costing about 100 yen for three servings, with plenty of vegetables. The key point is to season the vegetables well. Background of this recipe: Whether it's yakisoba or fried rice, if you season the vegetables well first, the noodles or rice won't become watery and will taste delicious.

Savory Vietnamese Vegetable Dipping Sauce
Once my friend invited me out to try Southern Vietnamese cuisine, I was very impressed with caramelized fish sauce served with crispy rice crackers and steamed vegetables. Ravioli w/ Meat Sauce
My eyes lit up when I found this pasta machine in the store one day. Then I started thinking about making ravioli. I kept my eyes open for a ravioli cutter, but couldn’t find one. I found a “Ravioli Plate”. I want to stress that this is one of those items that you’ve got to spend the money on. I found that out after the fact. I was able to make reasonable looking ravioli, but I was left with a lot of extra filling. I ended up putting the leftover filling into the sauce. I feel like the ravioli cutter would be better because then you’re not bound by the size of the cavity in the plate. I was very upset that I couldn’t make larger, more packed ones. Nonetheless, I carried on. Live and learn. Fair warning: it’s kind of a pain in the behind to make this... but you’ll have the everlasting privilege of being able to say you made homemade ravioli.

Nuoc Cham (Vietnamese Dipping Sauce/Dressing)
Nuoc cham (nook CHAHM) is that sweet and salty Vietnamese style fish sauce based dipping sauce that seems too watery to be considered a sauce in the context of most other cuisines but totally works in Vietnamese dishes like cha gio (deep fried spring rolls) and bun (BOOHN) (cold noodle salad). In my kitchen, it is a mother sauce of sorts, and there are so many ways you can dress it up. For salad dressing, you could add a splash more of an acid element like fresh citrus juice and some oil. You can add fresh mint, basil, or cilantro. A dollop of sriracha or chili garlic paste is also a great addition, as are a few slices of fresh chilies such as jalapeno, serrano, or even habanero. And the best thing is it keeps indefinitely in the fridge. You could make some today for your noodle salad, and whatever's left over will will taste just as good a month from today.
