Ingredients

  1. For Vada-
  2. 3 cupsurad dal/ husked black lentil
  3. 5-6green chillies
  4. 1 inchginger
  5. 1 tsp hing
  6. As per taste Salt
  7. Fordahi
  8. 500 gmscurd / yogurt
  9. 2 Spoonssugar optional
  10. 5 spoonswater
  11. As per TasteSalt
  12. 1/2 tspblack salt
  13. For garnishing-
  14. as requiredGreen chutney
  15. as per tasteSweet tamarind chutney
  16. As neededRed chilli powder
  17. as per needRoasted cumin powder
  18. as neededChaat masala
  19. fresh Coriander leaves

Cooking Instructions

    Firstly wash the utari dal gently. Soak urad dal overnight or at least for 4 to 5 hours.

    Later drain all the water using a stariner and grind it in a blender or mixer grinder. Add green chillies and ginger, hing in it. Use little water while grinding it. Grind it in two batches. Keep a side for 10 minutes.

    While that time beat the curd until smooth. Add little water to whisk.

    Add sugar,salt and black salt. Mi well and keep in the refrigerator.

    Heat oil as needed for frying on a medium flame. Once the oil heated you can either drop the batter carefully with your fingers or with a spoon in medium.

    Fry the wada in batches. Let the bottom side become light golden and crisp. Turn it. Let be golden brown from other side also. Once it's done remove it and place the wada on paper towels.

    Wait for 2 to 3 minutes and add it in water. Let them soak for 12-15 minutes. The wada will release some of the oil and absorb water increasing a bit in size with a color change.

    Press each soaked wada between your palms to remove water. Gently press otherwise it will break. Press all wadas like this and keep a side.

    Now in a serving plate arrange wada. Pour the beaten curd evenly all over the wada covering them completely.

    Pour the green coriander chutney and sweet tamarind chutney as you like. Sprinkle few pinches of red chilli powder, cumin powder and chaat masala.

    Garnish it with coriander leaves and serve it.
