Inspired by a focus on not wasting food. I had couscous near its use by date, chicory , raisins and some vine tomatoes that needed eating or cooking. A very simple salad - hardly any cooking. I served it with baked salmon fillet and roasted plums.

Inspired by a focus on not wasting food. I had couscous near its use by date, chicory , raisins and some vine tomatoes that needed eating or cooking. A very simple salad - hardly any cooking. I served it with baked salmon fillet and roasted plums.

Ingredients

2 people
  1. 100 gcouscous
  2. 1 tablespoonolive oil
  3. 180 mlboiling water
  4. Handfulraisins
  5. Halfa red pepper - chopped
  6. 4-5small tomatoes - quartered
  7. I red chicory - chopped (optional- I had one that needed eating)
  8. Chopped parsley for serving

Cooking Instructions

    Heat oil in a frying pan and add the couscous. Fry for 1-2 minutes, stirring regularly.

    Add the boiling water, stir and leave for 3minutes.

    Stir through the raisins, red pepper, chicory leaves and tomatoes.

    Sprinkle on chopped parsley and serve
