Ingredients

  1. 1medium bowl baby spinach
  2. 1onion (thinly sliced)
  3. 1small bowl garlic (finely chopped)
  4. 1 cupmushroom (thin sliced)
  5. 3eggs
  6. 2-3big tbsp sour cream
  7. 2 tbspginger powder
  8. 1 tbsprosemary
  9. 1 tbspthyme
  10. 1 tbspcrushed peppercorns
  11. 2 tbspolive oil
  12. 3 tbspcheese (any kind shredded)

Cooking Instructions

    Shallow fry the onions,garlic,mushroom and spinach.

    In a separate bowl beat the eggs, sour cream, rosemary, thyme, ginger powder, salt, peppercorns, shredded cheese. Add in the onion/spinach mixture. Whisk properly so that no lumps are formed.

    Brush the casserole with some olive oil, pour in the egg mixture, spread evenly and bake at 350 deg farenheit for about 35min.

    Enjoy with croutons and ranch sauce.
