Ingredients

  1. 1-onion chopped
  2. 1-tomato chopped
  3. 1-Carrot chopped
  4. 1/4-cup purple cabbage finely chopped
  5. 1/4-cup red capsicum chopped
  6. 1/4 -cup-green capsicum chopped
  7. 1/4-cup- Sweetcorn
  8. 1/4-cup Broccoli chopped
  9. 1-cup suji
  10. 3-cup coconut milk
  11. 1 tbsp dry red garlic Chutney
  12. as per tasteSalt
  13. 2 tbsp oil
  14. 1 tsp saunf
  15. 1 tsp udid dal
  16. 1 tsp cumin
  17. 1 tsp mustard
  18. 8-10curry leaves
  19. 1/2 tsp asafoetida
  20. 1/2 cup chopped coriander
  21. as required Few chopped cabb,capsicum, coriander, Sweetcorn and spring onion

Cooking Instructions

40-mins.

    First dry roast suji in a pan till aroma releases. Keep all the chopped vegetables ready.

    Boil coconut milk and keep aside. Heat a pan and dry roast udiddal,saunf,cumin and mustard first and then add oil.

    When starts cracking add curry leaves asafoetida and red garlic Chutney saute for a while add all the veggies and saute it stirring continuously. Add roasted suji and again mix well and saute for a while.

    Add saltand chopped coriander mix well and pour coconut milk stirring continuously on medium flame. Cook stirring continuously till upma is cooked nicely. Serve Healthy Tasty Veggie Coconut Suji Upma in a plate garnishing with chopped vegetables.
