Pancakes can be sweet or savoury. I prefer savoury pancakes over sweet pancakes. You can add any vegetables of your choice to this savoury pancakes made out of green gram (moong) dal. There is no flour used to prepare this pancake which makes it super healthy. The use of fresh vegetables and spices make it delicious. You can serve it as a breakfast or even as a meal along with your favorite chutneys, pickles or plain yoghurt.

Ingredients

  1. 1 cupmoong dal without skin
  2. 1/2 cupwater
  3. 3 tbspfinely chopped onion
  4. 3 tbspfinely chopped tomatoes
  5. 1/2 cupfinely chopped spinach
  6. 2 tbspchopped coriander leaves
  7. 2green chillies finely chopped
  8. 1 teaspoongrated ginger
  9. 1 teaspooncumin seeds
  10. to tasteSalt
  11. 3 tbspsesame seeds
  12. as neededOil to roast

    Wash and soak yellow moong dal for 3 to 4 hours drain the water and grind it to a fine paste.

    Chop onion, tomato, spinach, coriander, green chilli and ginger. Add everything to the prepared batter and mix it well. Add salt and cumin along with half a cup of water and give it a good mix.

    Heat a non-stick pan and apply little bit of oil. Now spread the pancake batter. Sprinkle it with sesame seeds and drizzle little oil. Cover and cook it on medium heat for 3 - 4 minutes or until light brown. Now flip it over, cover and cook it on medium heat for 2 to 3 minutes. Put it on a wire rack. Prepare all the pancakes in the same way.

    Serve delicious veggie pancakes with plain yoghurt, chutney or pickle of your choice. It can be served as a breakfast with a hot cup of tea or coffee or it can be even served as a light meal.
