Ingredients

  1. 1/4 cuphoney
  2. 2 tbsprice vinegar
  3. 2 tspsoy sauce
  4. 1 tbsptomato purée
  5. 2 tspwater
  6. 113 gpork tenderloin
  7. 1 tspsalt
  8. 1 tsppepper
  9. 1/4 cupflour
  10. 3 tbspcornflour
  11. 1 tbspminced garlic
  12. 1egg
  13. 1white onion
  14. 1carrot
  15. 1green bell pepper
  16. 1 canpineapple chunks
  17. 3 tbspvegetable oil
  18. 250 gbasmati rice

Cooking Instructions

    Mix honey, rice vinegar, soy sauce, tomato purée for the sweet & sour sauce and set aside.

    Combine cornstarch and water and set aside.

  3. 3

    Season pork with salt & pepper.

  4. 4

    Mix flour and cornflour in a bowl, set aside. Whisk the egg and set aside.

  5. 5

    Batter each piece of pork by coating it with the flour mixture, then dip in the whisked egg, then a final coat in the flour mixture.

    In a wok, heat vegetable oil over medium-high heat. Add the battered pork and fry until golden brown and pork is cooked through and then set aside.

    In the same wok, fry minced garlic and onions for 30 seconds.

    Add green pepper, carrot and fry for 1 minute.

    Add pineapple and fry for 1 minute.

  10. 10

    Add in the pork and the sweet and sour sauce, stir to combine and allow the sauce to come to a boil.

    Add the cornflour and water mixture to the pan, stirring constantly until the sauce thickens.

  12. 12

    Serve with basmati rice.
