Crispy Cheese Cookies

I had some frozen cheese, so when a guest came to visit, I just made these very quickly.

You don't need to leave the dough to rest in the fridge, so when you get used to it, you can have these in the oven in five minutes.
They will be sweet with sugar and savoury with salt. Both make good snacks, and both are popular with guests when I serve them. Recipe by mini

Ingredients

  1. 110 gramsCake flour
  2. 10 gramsKatakuriko (or cake flour)
  3. 40 grams*Butter (or vegetable oil)
  4. 30 grams* Sugar (or 1/3 teaspoon of salt)
  5. 1 tbsp*Milk (water)
  6. 1 dashmore than 2 handfulls * Cheese

Cooking Instructions

  1. 1

Chop up the cheese (if you freeze it it's really easy to bread up.) Bring the butter to room temperature. (Microwave for 10-15 seconds at 500 W.)

  2. 2

Put the ingredients marked with a * into a bowl in the order listed and mix. Cut in the floury ingredients with a spatula. (Don't knead the mixture.)

  3. 3

Wrap the dough and form it into a stick shape. Slice into 5 mm-thick.

  4. 4

Bake for 14-16 minutes at 180℃. When the edges have browned slightly, let them cool down and they're done. (Adjust the baking time to your oven.)

  5. 5

Shape it into a rectangular stick and let rest on its long side.

  6. 6

Cut it. If the bottom looses its shape as you slice...

  7. 7

...hold the bit that sticks out between your fingers. (Don't touch the knife.)

  8. 8

This is what they look like sliced and laid out. If you like, sprinkle some table salt on here, and then bake in the oven.
