My take on a turkey chilli. A carrot can also be added to the recipe or replaced with the peas and a green chilli or fresh chilli of choice can also be added.
I had ran out of ground cumin so didn't add it in but 1 tablespoon can also be added.

Ingredients

  1. 1onion, chopped
  2. 500 gminced turkey
  3. 3garlic cloves, minced
  4. 1celery stalk, sliced
  5. 1 cupfrozen corn
  6. 1red pepper, deseeded and chopped
  7. 1 can (400 g)kidney beans, drained
  8. 1 cupfrozen peas
  9. 2 canschopped tomatoes
  10. 400 mlChicken stock
  11. 1 tbsppaprika
  12. 2 tspdried oregano
  13. 1 tbspmild, medium or hot chilli powder
  14. 1/4 tspcayenne pepper
  15. 4 tbsptomato paste
  16. 2 tbspolive oil
  17. Bunchfresh coriander, chopped
  18. Salt to taste
  19. Ground black pepper to taste

Cooking Instructions

    Heat the oil over medium-high heat.

    Add the onions, red pepper, garlic and celery (carrot and fresh chilli if using) and fry for a few minutes until soften.

    Add in the turkey mince and fry until browned. Break up large chunks with the spoon.

    Next add the chilli powder, paprika, oregano, cayenne powder (cumin if using), frozen corn and peas. Mix everything well.

    Add the chopped tomatoes, paste and stock. Mix and bring everything to a boil.

    Reduce heat to a simmer and add the kidney beans. Cover with lid and simmer for 60-90 minutes to get the meat really soft and to reduce the sauce.

    Taste and season with salt and pepper. Stir in the coriander.

    Serve with choice of sides. I served mine with rice and nacho chips.
