Ingredients

  1. 1Turkey Carcass plus any leftover turkey meat
  2. 2 canCorn
  3. 2 canGreen Beans
  4. 2 canPeas
  5. 2 canSliced Carrots
  6. 2 (32 oz.)Container Chicken Broth
  7. 1Onion
  8. 2 tbspMinced Garlic
  9. 1 tbspPoultry Seasoning
  10. 1large Bunch Escarole
  11. 1Salt & Pepper to taste
  12. 1 lbPasta, I used Ditalini
  13. 1Parmesan Cheese (optional)

Steps

  1. 1

    In a large pot, add turkey carcass and onion. Cover with water to about an inch above the carcass. Bring to a boil then lower heat and cook for 2 hours.

  2. 2

    Place a strainer on another pot. Remove carcass, place in strainer then pour broth through strainer.

  3. 3

    Add vegetables, escarole, chicken broth, and seasonings to stock.

  4. 4

    Pick off as much turkey from carcass as possible, add all meat to stock.

  5. 5

    Bring to a boil and cook for 30 minutes. In last 10 minutes, add pasta.

  6. 6

    Sprinkle with parmesan cheese, if desired.

  7. 7

    Serve hot and enjoy!
