Japanese tomato rice and Omelette developed around 1920 in Tokyo it’s now incredibly popular in Japan. Having dedicated Omurice Restaurants that just sell the Omelette with many different fillings in! Traditionally the omelette has a runny middle and is cut over the rice so it runs out on to the mound of rice. They have little metal oval rice moulds, I have just used a oval dish instead. It shouldn’t have any colour on the omelette either, well I did try anyhow. Good job my dog loves eggs!
Who would have thought a Omelette would be so tricky to make, after so many You Tube tutorials and many disasters it’s sort of here! To get the same flavour you can just roll up an omelette if you don’t have the time to make it the traditional way.
I’m doing this for my ‘throw it in Thursday’ feature for BBC Radio Derby. To go with the Olympic theme!

Cooking Instructions

Put the butter in a frying pan, heat it on a medium setting, chop the chicken and throw that in the pan too!

Whilst the chicken is cooking prepare the onion, stir the chicken then add the onion, stirring until translucent.

Dice the red pepper throw it in as well and the soy sauce.

Add the cooked rice.

Stir the rice, traditionally in Japan you shouldn’t stir it you should flip the pan so it all mixes up!

Add the ketchup heat so it becomes sticky then set on a low side and set aside to make the Omlette.

Crack the eggs in a bowl, add the milk and salt, with a fork whisk until smooth.

Heat a smallish frying pan.

Add the egg mixture.

Make the omelette, they traditionally serve it in what they say is a dolphin shape.

Put the rice into a bowl pressing it into a shape, then tip it upside on a plate, add the omelette and drizzle so more ketchup! Tuck in!
