I think most Delhites wl agree that winter n Hari subji,...n Hari subji... ALOO Methi... Na khai to ki khaya...tonu...I mean if not methi aloo in winter,so what you have eaten. ..
My love for methi aloo is also Same...It's lovely with any Indian bread ...so let's get started...

First add butter to any deep kadai...

Add jeera,Hing,sliced onion,allowing it to b golden,add green chillies, ginger,garlic,one after another....then add potatoes to golden color.Here..again some avoid ginger...n only do with garlic...but ginger also add tastes. Same is with Hing some avoid... considering garlic the enhancer...so if adding ginger,like me..

Add garlic in bit higher propertion than ginger...I have added onion caremelised it...to adjust bitterness,but originally onion is avoided by many...so exercise yr choice.

Now add chopped methi,do then flame low...n do not cover,to avoid discolouration....allow potatoes...to b tender..n leaves to leaveoisture...n get cooked with butter....you may add powder garam masala,but I avoid...
Serve hot....
