In childhood, we loved paav bhaji without the vegetables ! Only potato and peas were allowed. So my grandmother used to make the paav bhaji with potato gravy and peas and it tasted Yumm! Try making it for lunch and your family will love it!

First, mash the potatoes well. Then mix all the spices in a small bowl, add 1 tablespoon water and keep ready.

Then heat 1 tablespoon butter and pop cumin seeds. Then saute' onions till soft and pink. Then saute' ginger garlic paste for a minute.

Then saute' tomato puree and prepared spice water till everything is combined well and aromatic.

Adjust seasoning, add paav bhaji masala, salt and a pinch of sugar.Add boiled peas, water and cook well on low flame till thick, steaming and bubbly.

Then remove from heat, add lemon juice, rest of butter. Add some corinader leaves too.

To serve, spread butter on the paav and roast on tawa till crisp. Serve paav bhaji garnished with a dollop of butter and coriander leaves on top accompanied by roasted paav, chopped onion and lemon wedges.
