Luncheon plantain fritata

This recipe was born out of what was available. Usually i make use of sausages for this recipe, but on this faithful morning while preparing school lunch for my kids, i realized i was out of sausages but i had luncheon and decided to give it a try. I can assure you, at first taste i was sold 😀. Now this will be a thing 😄 #kidsdelight

Ingredients

  1. 4large eggs
  2. 1 teaspoonwater
  3. 1/4 teaspooncurry powder
  4. 1/4 teaspoonsalt
  5. 1/4 teaspoonseasoning powder
  6. 1big clove garlic (pounded)
  7. Small cut ginger (pounded)
  8. Small cut green bell pepper
  9. Small cut onions
  10. 2 piecesscotch bonnet peppers
  11. Small cut yellow bell pepper
  12. Small cut red bell pepper
  13. Little vegetable oil
  14. Sliced luncheon
  15. 2medium sized ripe plantain

Cooking Instructions

    Dice the plantain and season with a pinch of salt and fry

    Whisk eggs in a bowl and sliced all the vegetables thinly

  3. 3

    Pour in the diced vegetables and pounded ginger with garlic into the egg

  4. 4

    Mix and add the seasoning and salt with curry powder

  5. 5

    Place a clean non stick pan on very low heat

  6. 6

    Grease the pan with little vegetable oil properly and arrange some of the fried plantain on the pan

    Now pour in the egg mix

  8. 8

    Arrange the remaining plantain ontop of the egg mix

  9. 9

    Now place the luncheon on it as well

  10. 10

    Cover and allow the egg to set on very low heat (very important to prevent the under from burning)

  11. 11

    This should take like 10-1minutes to set on low heat. Use a pot lid to flip when set for the top to properly set if possible
