Ingredients

  1. 1 lbChicken thighs boneless, cut into 1-2 inch pieces
  2. For marinade
  3. 1/4 cupYogurt thick
  4. 3/4 tablespoonGinger grated
  5. 3/4 tablespoonGarlic minced
  6. 1 tablespoonLime juice
  7. 1 teaspoonKashmiri red chili powder
  8. 1/2 teaspoonGround Turmeric (Haldi powder)
  9. 1 teaspoonGaram masala
  10. 1 teaspoonSalt adjust to taste
  11. Spices for sauce
  12. 1/2 teaspoonGaram masala
  13. 1 teaspoonKashmiri red chili powder
  14. 1/2 teaspoonGround Turmeric (Haldi powder)
  15. For sauce
  16. 2 tablespoonGhee or Oil divided
  17. 1 cupOnion finely diced
  18. 1 teaspoonGinger grated
  19. 1 teaspoonGarlic minced
  20. 1 packetSpaghetti or another pasta
  21. 1 cupTomato Puree canned
  22. 1/2 cupHeavy cream or more for creamier texture
  23. 1 tablespoonDried Fenugreek leaves (Kasoori Methi) optional
  24. Lime juice to drizzle
  25. Cilantro to garnish
  26. 1/4 tspGreen food colour
  27. 1/2 cupMix frozen veggies

Cooking Instructions

    Marinate the chicken
    Combine all ingredients for the marinade (except chicken) in a bowl and mix well. Add chicken and mix well with the marinade. Let is rest for anywhere between 30 minutes to 8 hours in the refrigerator.

    Heat a large pan on medium heat. Once hot, add oil to it. Add the onions and saute for 2 minutes. Then add ginger garlic paste and sauté for another minute.
    Add marinated chicken and spices for sauce. Mix and sauté for 3-4 minutes while stirring frequently. The chicken will change color slightly.
    Add the tomato puree and stir well. Now cook on medium flame untile the chicken is cooked completely.

    Boil the pasta in a pan according to package directions. Once boiled add green food colour, rinse set it aside. Reserve some pasta water from boiling to add later.

    Now add the boiled pasta and mix well. Add the reserved pasta water as needed to get the right consistency.
    Add kasuri methi mix frozen veggies and cream and mix with the pasta. Let the pasta simmer for 2-3 minutes with the sauce. Turn off heat.

    Garnish with cilantro and a drizzle of lime juice. Chicken tikka masala pasta is ready
