The mixture is shaped into kebobs and cooked until crispy, making them a tasty and nutritious option for those following a vegan diet or simply looking to enjoy a meat-free meal.

Prepare the Tofu: Press the tofu to remove excess moisture, then crumble it into a mixing bowl.
Sauté Aromatics: In a pan, lightly sauté the chopped onion and minced garlic until soft and fragrant. Let it cool before adding to the tofu.

Mix the Ingredients: Add the ground coriander, nutritional yeast, ground fennel, garam masala, turmeric, chili powder, salt, fresh mint, tomato sauce, chickpea flour (or breadcrumbs), and fresh coriander to the crumbled tofu. Mix everything thoroughly until well combined.

Shape the Kebobs: Take portions of the mixture and shape them into kebob forms around skewers. If the mixture feels too soft, add more chickpea flour or breadcrumbs for binding.
Cook the Kebobs: Heat oil in a pan and fry the kebobs until golden brown and crispy on all sides. Alternatively, you can bake them at 400°F (200°C) for 15-20 minutes or grill them for a smoky flavor.
