Ingredients

  1. 540 gthinly sliced peeled potatoes,
  2. 75 gmature cheddar cheese, grated,
  3. 350 mlwhole milk,
  4. 2 tbspplain flour,
  5. 1large garlic clove, crushed,
  6. 40 gunsalted butter,
  7. 1little grated nutmeg,
  8. Salt & pepper to season,
  9. 50 mlwater,
  10. To garnish:
  11. Fresh chives, chopped finely

Cooking Instructions

    Bring a saucepan of water to a gentle boil and add in the sliced potatoes. Parboil for around 7-8 minutes until just becoming tender. Preheat oven to 180 (fan). Make the white sauce for the gratin by adding butter to a saucepan over a medium heat, once melted stir in the flour & allow to form a smooth paste. Gradually add the milk whilst whisking. Season with a grating of nutmeg, white pepper & salt, add the garlic & stir.

    Once thickened, add around 50ml water, stir until loose & glossy then set to one side.

    In a heat proof dish layer up the white sauce, potatoes & cheese in layers, finish with a generous grating of cheese on top

    Bake in the oven for 20-25 minutes until the top is bubbly & golden. Scatter over chopped chives before serving. Enjoy! :)
