Quick and Simple Lemon Rice

Probably one of the most common ways of utilising leftover rice, lemon rice is not just simple to make, but tastes delicious, and can be relished for breakfast or for lunch.
My recipe is slightly more spicy, and uses 3 types of chillies: dried red chilli, fresh green chillli and Kashmiri red chilli powder.

Quick and Simple Lemon Rice

Cooking Instructions

Heat oil in a pan.

Add mustard seeds, chana dal and dried red chilli. Cook for a minute or two on low flame.

Add curry leaves and let them crackle.

Add chopped green chillies and cook for another minute.

Add chopped onion and cook for 2-3 mins till it softens a little.

Add salt, red chilli powder and turmeric powder. Cook for a minute.

Put the leftover rice in the pan and squeeze the lemon juice.

Mix till it all comes together.

Add freshly chopped green coriander to the rice and then mix again.

Garnish with peanuts and serve.
