Ingredients

4 servings
  1. 8large fresh tomatoes, plum tomatoes Preferred
  2. 1 tbssalt (or to taste)
  3. 1.5 tspblack pepper
  4. 1.5 tbsgranulated sugar (this controls the acid)
  5. 6 clovesgarlic, rough chopped
  6. 1onion, rough chopped
  7. 6 leavesfresh sweet basil
  8. 1 tspgarlic powder
  9. 2 tspdried parsley
  10. 1 tspdried thyme
  11. 2 tbsgood olive oil
  12. 1/4 cupheavy cream
  13. 1 cupcooked pasta
  14. 1/2 cupwater or chicken broth

Cooking Instructions

  1. 1

Peel your tomatoes as best you can, roughly chop and set aside

  2. 2

In a large soup pot, drizzle your olive oil and Sautee your onion and garlic for about 5 min

  3. 3

Add your tomatoes, basil and seasonings. Then add your water or chicken broth. Bring everything to a rapid boil.

  4. 4

Turn the heat down and let the soup simmer on low, slightly covered for 1 hour.

  5. 5

After an hour, blend the soup with an immersion blender or in batches in your regular blender.

  6. 6

Pour the soup back to the pot and let simmer about 30min. I drizzled with a little extra olive oil at this point.

  7. 7

Turn the heat off and stir in your heavy cream.

  8. 8

Spoon the desired amount of pasta in your bowl, then pour the desired amount of tomato Bisque to your bowl.

  9. 9

Garnish with parm cheese and more fresh basil to garnish.
