Ingredients

  1. For Curd-Spice Mixture:
  2. 1/2 cupYogurt
  3. 1 tspTurmeric Powder
  4. 2 tspCoriander Powder
  5. 1 tspKashmiri Red Chilli Powder
  6. 1 tspCumin Powder
  7. 1 tspBlack Pepper Powder
  8. 1 tspChaat Masala
  9. 1 tspPav Bhaji Masala
  10. 1 tspKasuri Methi
  11. 2 tbspsRoasted Gram Flour
  12. Other Ingredients:
  13. 2 tbspsOil
  14. 1 tbspButter
  15. 1 tspCumin Seeds
  16. 1 InchGinger (Chopped)
  17. 1Large Onion (Chopped)
  18. 2Medium Tomatoes (Chopped)
  19. 4Green Chillies (Chopped)
  20. Salt to Taste
  21. 200 gmsAmul Malai Paneer (Crumbled)
  22. 1/2 cupMilk
  23. 1/2 tspGaram Masala Powder
  24. For Garnish:
  25. 1 tbspCoriander Leaves (Chopped)
  26. 3-4Sambar Onions (Chopped)
  27. Butter (Dollop)

Cooking Instructions

    Firstly, immerse the paneer in hot water and little salt for 10 minutes to get a super soft texture of the store bought paneer. Crumble the paneer in a plate and set it aside.

    Roast the gram flour and set it aside.

    In a mixing bowl, add all the ingredients mentioned above under “For Curd-Spice Mixture”. Mix until well combined and set it aside.

    Heat oil and butter in a pan. Add cumin seeds and allow it to sizzle for few seconds. Add the chopped ginger and saute for a minute.

    Add the chopped onions and saute until the onions turn light pink. Add the chopped tomatoes and salt.

    Add the chopped green chillies and saute till the tomatoes turn soft. Add the curd-spice mixture and mix it well.

    Add some water and allow it to cook for 4-5 minutes. Now add the crumbled paneer.

    Mix it gently. Add milk and again allow it to cook for 4-5 minutes. Add garam masala powder and mix it well.

    Switch off the flame and garnish it with chopped sambar onions, coriander leaves and a dollop of butter. Amritsari Paneer Bhurji is ready to be served immediately with hot rotis.

    Serve this delicious Amritsari Paneer Bhurji with warm, fluffy parathas or as a filling for sandwiches.
