Milk Cake or Milk Burfi is a rich ,decadent Indian Sweet. It requires few basic ingredients like milk, sugar, ghee, milk powder along with a pinch of Alum Powder to curdle milk to make this authentic halwai style milk dessert. Milk Cake is nothing but partially curdled and evaporated full fat milk with sugar till it is thickened and comes together like a halwa.The texture is grainy and you get a melt-in-mouth feel with every spoonful you take.It tastes delicious but requires Lots of Patience as it involves monitoring the milk by constant stirring to achieve the ultimate result.Serve this North Indian style Mithai as an aftermeal dessert on special occasions or during festivals.

Ingredients

  1. 750 mlfull fat milk (Amul Gold)
  2. 4-5 tbspsugar or as needed
  3. 5 tspmilk powder
  4. 1/4th tsp cardamom powder
  5. 1/4th tsp Alum Powder (Phitkari)
  6. 2 tspghee / clarified butter
  7. Pumpkin seeds for garnishing

Cooking Instructions

    Heat milk in a heavy skillet and let it boil.Make a slurry of milk powder adding some warm milk.Add this to the boiling milk.Reduce flame and cook stirring constantly until milk is reduced to half.Add 1/4 th tsp alum powder and mix it well. Milk will start curdling partially.

    Cook this partially curdled milk till it thickens.Add sugar gradually as needed and keep stirring. Now add 2 tsp ghee, 1/4 th tsp cardamom powder and mix it well.Continue stirring till the mixture starts changing colour and starts leaving the pan.

    Transfer the mixture into a greased tray or mould.Cover with a silver foil and wrap it in a kitchen towel.Leave as it is and allow it to set for 2 hours.Demould it by turning it upside down on a plate.

    Cut into squares and garnish with Pumpkin Seeds, pistachios or sliced almonds.Cool and serve delicious, melt-in-mouth milk cake as an aftermeal dessert on special occasions or festivals.
