Ingredients

  1. 4Medium russet potatoes, peeled and cut into 1" cubes
  2. 4 Cupswater + 1 Tbs salt
  3. 1 TbsOlive oil + 1 Tbs Ghee or Butter
  4. 1 TbsGinger and Garlic Paste
  5. 1Medium Onion chopped
  6. 1 tspsalt
  7. 1 tsp cumin seeds,
  8. 1 tsp chilli flakes
  9. 1 tspturmeric
  10. 1 tsp crushed coriander
  11. 1medium tomato chopped
  12. 1 tspTamarind pulp
  13. 1 cupBroth (your choice vegetabl or chicken or beef broth)
  14. Halfcup chopped cilantro

Cooking Instructions

    Boil potatoes in 4 cups of boiling water with salt.

    In a separate Pan (heated on Medium heat) add oil and ghee. Add Ginger, Garlic, onions, cook for 3 minutes and add cumin, 1ts salt, Chilli flakes, turmeric and coriander. Cook 2 minutes and add tomatoes cook for 3 minutes and add tamarind pulp. Add 1 cup water or broth.

    Cook for 5 minutes under low heat covered. Now fold in boiled potatoes and chopped cilantro. Dish is ready enjoy. I am serving it with Quinoa Dosa.
