Easy Meatball, Mushroom pasta

Wanted an easy, non-tomato based, porcupine esk, meatball dinner. So came up with this mushroom based, pretty easy dinner. I mixed the meat the night before, let it sit in the fridge until the next day. They turned out great. Held together, tender, the best meatballs I ever made. Maybe I got lucky, but this is a make again, for sure.

Ingredients

  1. Meatballs
  2. 1 poundground beef 80/20
  3. 1 1/4 cupcooked rice
  4. 2 teaspoonsgarlic powder
  5. 2 teaspoonsonion powder
  6. 1 packagemushroom gravy, powdered
  7. 3 tablespoonsbread crumbs
  8. 1egg
  9. 1/2 teaspoonblack pepper
  10. to tastesalt
  11. Sauce
  12. 1 cancream of mushroom soup
  13. 1 canmilk
  14. 1black pepper to taste

Cooking Instructions

    Mix all Meatball ingredients. I was using left over rice, so declump it if you do also.

    I made this the night before, and let it sit until the next day, in the fridge.

    Make meatballs, we made ours about golf ball sized.

    Brown in a little oil in a skillet large enough. I used medium high heat.

    Mix all sauce ingredients in a bowl.

    After meatballs are browned, add sauce.

    Once sauce starts to bubble, turn heat down to medium low.

    Cook until meatballs are cooked through. For me it was about 10 minutes. It depends on the size of your meatballs, and how long you brown them.

    I served ours over a mix of noodles.

    Garnish with green onions, parsley, cheese or nothing.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
