If you have less veggies in your fridge,then this is a good idea to make mix subji.
It looks and tastes delicious..
Cooking Instructions

Peel wash and finely chop all the veggies together with green chillies and tomato.

Take oil in a pan,add mustard seeds, Cumin seeds and asafoetida to crackle.
Then add the Mixed veggies.
Add salt and turmeric powder.
Mix well and cover the pan and let the veggies cook on a slow flame. - 3
When veggies are nearly cooked,add chilli, coriander and turmeric powder along with fresh coriander and little water.
Mix well and cover the pan to cook the veggies completely. - 4
If u want to mix vegetables in Gravy,then add water, otherwise cook dry.
I added water because I want to eat it with rice.
Now Mixed veg subji is ready.
Transfer into a serving bowl.
Sprinkle some coriander leaves.
Serve immediately.
Enjoy with rice,roti or all alone..
