Waldorf Style Salad with Chicken

This is a spin on a classic Waldorf salad, but with the added protein of chicken and served over romaine to make it into a hearty lunch. I also put together a creamy poppy seed dressing for this, rather than using mayo only, which is what a traditional Waldorf salad is tossed with. I generally eat salads at work, so I usually pack my salads up in a quart sized mason jar to easily take it with me. Recipe loosely adapted from : The Domestic Geek

Ingredients

1 salad
  1. Dressing :
  2. 2 tbsp.mayonnaise
  3. 1 tbsp.sour cream
  4. 1 1/2 tsp.honey (or granulated sugar)
  5. 1/2 tsp.apple cider vinegar
  6. 1/4 tsp.poppy seeds
  7. pinchsalt and pepper
  8. 1-2 tsp.milk (optional to thin out dressing)
  9. Salad :
  10. 1/2 cupdiced apples
  11. 1/2 cupred grapes, sliced in half
  12. 1/2 cupcoarsely chopped walnuts
  13. 1/4 cupdried cranberries
  14. 1/4 cupthinly sliced celery
  15. 1cooked and diced chicken breast
  16. 1 1/2 cupschopped romaine lettuce (or green of choice)

Cooking Instructions

    Whisk together all of the dressing ingredients in a small bowl and set aside.

    The dressing is quite thick (especially if you use sugar instead of honey), so if you'd like it thinner, you can add milk a tsp. or so at a time until you reach the consistency you like.

    For the salad, just toss everything together, drizzle the desired amount of dressing over the top and enjoy!

    If you'd like to pack this in a mason jar like I do, use a wide mouth quart sized one. Dressing in the bottom, then layer in the celery, apples, grapes, chicken, romaine, dried cranberries and walnuts...in that order.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
