Cooking Instructions

In a large plastic zip bag, combine olive oil, garlic, lemon juice, red wine vinegar, oregano, greek yogurts and salt and pepper. Add chicken (preferably chopped). Massage to mix.

Marinate for at least 20 minutes, up to 12 hours.

Drain the chicken from the marinade, discarding the marinade and cook, flipping part way through. Cook approximately 3-4 minutes per side. Cooking time depends on thickness and size of the chicken. Cook until internal temp is 165 degrees.

Prepare salad & rice. Plate & top the rice with chicken & tzatziki.

Greek Cucumber Salad
This has become a go-to for weekly meal prepping. It's such a simple, but tasty recipe and adds a lot of freshness to a meal. I usually pair it with some quinoa or brown rice, some chicken or drained and rinsed chickpeas and some feta cheese. If you'd like to take some of the 'bite' out of the raw onion, soak it in some cold water for a few minutes first.

Greek Style Quinoa Salad

Chicken Breast Salad

Cucumber ~ Tomato Salad
A light "chunky" side dish to compliment most grilled BBQ meals or serve with Italian dishes. The fresh basil gives it a nice flavor. Add a “hint of mint” (instead of basil) and black olives for a slight, cool refreshing taste, especially with Mediterranean dishes of lamb, grilled chorizo and/or seafood.
