Ingredients

  • Greek Chicken:
  • 2 poundsboneless, skinless chicken breasts
  • 1/4 cupolive oil
  • 3 Tbsgarlic, minced or powder
  • 1/3 cupfresh lemon juice
  • 1 Tbsred wine vinegar
  • 1 Tbsdried oregano
  • 1/3 cupplain Greek yogurt
  • to tasteSalt and pepper
  • Greek Salad:
  • 2Cucumbers, peeled and sliced
  • 1Tomato, diced *or cherry tomatoes
  • 1/3of a red onion, diced
  • 1/3 cuplemon juice
  • 2 Tbsolive oil
  • 1 Tbsred wine vinegar
  • 1/2 Tbsminced garlic
  • 1/2 tspdried oregano
  • The Rest:
  • 3 cupsbrown rice

    In a large plastic zip bag, combine olive oil, garlic, lemon juice, red wine vinegar, oregano, greek yogurts and salt and pepper. Add chicken (preferably chopped). Massage to mix.

  2. 2

    Marinate for at least 20 minutes, up to 12 hours.

  3. 3

    Drain the chicken from the marinade, discarding the marinade and cook, flipping part way through. Cook approximately 3-4 minutes per side. Cooking time depends on thickness and size of the chicken. Cook until internal temp is 165 degrees.

  4. 4

     Prepare salad & rice. Plate & top the rice with chicken & tzatziki.
