These waffles were inspired by Hurricane Harvey. I love good waffles and being stranded in the hurricane with ripening bananas with most of us going nuts seemed like a natural.

Ingredients

  1. 3 cupswhite all-purpose flour, unsifted
  2. 3 Tbspwhite granulated sugar
  3. 2 Tbspbaking powder
  4. 1 tspsalt
  5. 2ripe bananas
  6. 3/4 cupbuttermilk
  7. 1 1/2 cupmilk
  8. 1/2 cupcorn oil
  9. 2eggs
  10. Chopped pecans

Cooking Instructions

    Stir all dry ingredients together in a medium-sized mixing bowl. In a separate bowl mash bananas. Add eggs and beat until frothy. Add buttermilk, milk, and oil. Stir until well mixed.

    Add wet ingredients to the dry mixture and stir until blended.

    Using a large spoon or ladle, scoop batter into the waffle maker, spreading the batter out evenly. Sprinkle pecans over batter. Close lid and bake to your desired crispness.

    Leftovers can be frozen and reheated in a toaster.
