Cooking Instructions

Add yeast to warm water and sugar. Wisk with fork and let stand for 5 minutes.

In a large bread bowl, mix remaining ingredients. Add yeast mixture to flour mixture. At first mix with wooden spoon, then used hands. Knead for about 8 minutes or until it becomes elastic like.

Place in a oiled bowl. Cover and place the bowl in a warm area. (in the microwave with a cup of warm water as a heat source) Allow enough time for the dough to double in size, but not longer or it will collapse.

Punch down dough. Knead it a few times. Divide into two 5" x 9" bread pans. Cover the pans, put them in a warm place and again allow dough to rise until it has doubled in size.

Pre-heat oven to 350*

Bake for 35-40 minutes until done. Bread that is done will seperate from the pan, slide out easily, and be brown on the bottom. If it is NOT like this, bake it longer.

Put bread on a cooling rack and cover with clean dish cloth to protect from any draft.

I have been baking bread for over 50 years now. I have used various recipes over time, but this is the one that it has evolved to. I have been using this recipe for the past 6 - 7 yrs. My family and friends all love it! It is especially good toasted and for making grilled cheese sandwiches. This recipe makes 5 loaves. I make a batch about every two weeks and freeze several of them until needed. In pursuit of shokupan with crispy crusts, I created this recipe.It's better not to dust your hands with flour, but if it's really hard to form the dough into shapes, apply a small amount of flour to a rolling pin and your hands. A savory dark bread we used dipping into our chili. If you use vinegar in this recipe remember it's acidic. Acid counters yeast and hinder it's rising, but it also counters gluten and breaks it down and cause it to become very sticky and a bit harder to work with. It's a welcomed flavour to this bread. A couple of tablespoons of vinegar about 3% acidity would be nice. skunkmonkey101 -
