Ingredients

  1. 3 tbspolive oil, extra virgin, plus extra for greasing
  2. 1/2 cupdijon mustard (regular or whole grain)
  3. 2 tbspbutter, melted
  4. 2 tbspfresh lemon juice
  5. 1 tsplemon zest, grated
  6. 3garlic cloves, minced
  7. 1 tbspdried oregano
  8. 2 tbspgrated parmesan cheese
  9. 1 tspsea salt
  10. 1/2 tspfreshly ground black pepper
  11. 5 cuppotatoes, cut into approximately 3/4 inches

    Preheat the oven to 425f/gas mark 7.

    Lightly grease a baking tray with olive oil. I added a bit of pork fat I had leftover from making pork crackling.

    Whisk together the mustard, olive oil, butter, lemon juice, lemon zest, garlic oregano, parmesan, salt and black pepper.

    Add the cubed potatoes and toss well.

    Spread out on a baking sheet and bake until crusty and golden brown. Times will vary, can take between 30-60 minutes depending on how well done you like the potatoes and how big the potatoes were cut. After the 30 minute mark, check every 10 minutes.
