Ingredients

  1. 1 cupFat free vanilla yogurt or plain fat free yogurt
  2. 1 cupOld fashioned oats
  3. 2Egg whites, slightly beaten
  4. 1/4 cupCanola oil
  5. 1/2 cupPacked brown sugar
  6. 1 1/3 cupflour
  7. 1 tspBaking soda
  8. 1 tspCinnamon
  9. 1/4 tspsalt
  10. 1 cupFresh blueberries or frozen(do not thaw)

    Heat oven to 400

    In small bowl mix yogurt and oats. In large bowl mix egg, oil, and brown sugar. Stir in flour baking soda, cinnamon, and salt.

    Next add yogurt, oat mixture (batter will be lumpy) gently stir in blueberries. Divide batter among 12 muffin cups.

    Bake 18 to 20 minutes or until golden brown.

Made this, it was great! I used coconut oil and added a handful of flax meal and a scoop of protein powder.
