I adapted a recipe I saw in a book to use instant coffee, and added a little sugar. If you have granulated sugar, use that instead of regular white sugar. I think it gives a slightly more refined sweetness. As I wrote in the introduction, I added a lot of gelatin to make it the consistency I like, so you can use less if you prefer. I still vividly remember the Mid-Autumn Festival, carrying lanterns in August, enjoying the festive treats my mom made... such beautiful childhood memories. This year, instead of traditional baked or sticky rice mooncakes, I chose to make a lighter, less sweet version. This is a healthy dessert made from jelly and coffee, with carrot used in place of salted egg yolk. It's unique and delicious! Minh HayesTranslated from Cookpad Vietnam
