Cheesy Chicken Enchiladas

Cooking Instructions

Preheat oven to 350°F.

Combine shredded chicken and one cup of cheese in a bowl.

Fill the tortillas with mixture and roll each one.

Please each tortilla filled in a greased 9 x 13 pan.

Melt butter in a small saucepan over medium heat.

Stir the flour into butter and whisk for 1 minute over medium heat.

Add broth and whisk together cook over heat until it thickens and bubbles.

Put mixture into refrigerator to cool for 5 to 8 minutes.

Add in sour cream make sure mixture is not hot because it will curdle.

Pour mixture over enchiladas add remaining cheese.

Bake in oven at 350°F for 20 minutes then set to broil for 3 minutes.
