Cheesy Enchiladas

Enchiladas made from tortillas. I love this dish.
If you keep a batch of the filing and sauce, you can make this whenever.
It's a taste that kids love. They can enjoy rolling up the tortilla. Also try changing the filling as you like. Recipe by CoffeeCoco

Cooking Instructions
- 1
Make the filling Add about a tablespoon of oil to a frying pan. Add chopped onions, then the minced meat and cook well. Add minced tomato, corn, and beans. Flavor with salt and pepper, and set aside.
- 2
Make the sauce In a container with about a tablespoon of oil, add flour, the spices, and canned tomatoes. Add 100 ml water and a bit of salt and boil for 10 minutes.
- 3
Lightly butter a heatproof plate and spread a bit of the sauce.
- 4
Spread a little sauce on the tortilla, and add a third of the filling.
- 5
Cover with lots of cheese.
- 6
Roll it up and lay on the plate from Step 3.
- 7
Top with lots of sauce and cheese. It'll also be delicious if you add your favorite powdered cheese and garlic powder.
- 8
Bake for 10-15 minutes in a preheated oven at 355°F/180°C and it's done!

We love Mexican fare in my house. I came up with this recipe entirely on my own and it gets better every time I make it. The packaged cheese dip really provides a great restaurant-like flavor and the seasoned meat is even better! I make my beef ones with green sauce and the cheese ones with red sauce, but do yours however you want! I just decided to post this since it’s Cinco de Mayo. They are yummy and a great way to honor the day! Plain Jane -
