Ingredients

  1. 1 canBlack beans
  2. 1/2 cupcilantro
  3. 1/2 tspground coriander
  4. 1 1/2 cupfresh or frozen corn
  5. 4 clovegarlic
  6. 4 eachRed chiles
  7. 1 smalljuice of lime
  8. 1 cantomatoes paste
  9. 2 largetomatoes
  10. 1/2 tspCayenne pepper
  11. 2 1/2 tspChili powder
  12. 1 1/2 tsppaprika
  13. 1/2 tspground coriander
  14. 1/2 tspfreshly ground black pepper
  15. 1/2 tspfreshly ground salt
  16. 2 tspcumin
  17. 1 tbspextra virgin olive oil
  18. 1 1/2 cupwater
  19. 2 cupcooked quinoa

Cooking Instructions

30 mins
  1. 1

    Cook 2 cups of quinoa while you prep the other ingredients.

    Once the quinoa is cooked , place it in a deep sauce pan with the other ingredients.

    Cover pan and cook on medium for 20 min . Stir occasionally. Reduce heat and cook on low for 10 min.

    Enjoy with some toasted naan bread or your favorite rice.

was really good. just like normal chilli but with a pretty different texture.
