I love lettuce wraps for lunch or a light dinner. This is a fast and very tasty one paring sauteed shrimp with crisp bacon and tomatoes!

Ingredients

  1. 1/2 lbmedium small raw shelled shrimp
  2. 8large lettuce leaves, I used romaine, but any sturdy cup shaped lettece will work
  3. 8thin slices bacon strips
  4. 1/2 cuphalved grape tomatoes or sliced cherry tomatos
  5. 1/4 cupmy spice rub, recipe attached in direction step #2
  6. 1/4 cupmore or less depending on your taste of my spicy ranch dressing/dip recipe attached in direction step#5

Cooking Instructions

    In a medium skillet fry bacon until crisp. Drain on paper towels. Remove all bacon fat except leave 1 tablespoon in to cook shrimp.

    Mix shrimp in spice rub to coat

  4. 4

    Heat reserved bacon fat in skillet until hot and cook shrimp until golden and cooked through 3 to 5 minutes

    Lay lettuce leaves on plates with cup side up and spread spicy ranch dressing in each one

    Evenly divide warm shrimp among lettuce leaf cups

    Add tomatoes

    Crumble bacon into pieces and add to top

    Serve right away while lettuce is crisp and shrimp is warm

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
