Ingredients

  1. 2English muffins split and toasted and lightly buttered
  2. 15 ounce can tuna, drained I used white albacore
  3. 1 tbspfinely chopped onion
  4. 2 tbspfinely chopped celery
  5. 2 tbspmayonnaise, more if you like it really creamy
  6. 1 tspfresh lemon juice
  7. 1/4 tspgarlic powder
  8. 1/4 tspblack pepper
  9. 1/4 tspdijon mustard
  10. 4 sliceof fresh tomato
  11. 4 slicesharp cheddar cheese-or cheese you like
  12. 4 slicepepper jack cheese- or cheese you like
  13. 1/2 cupshredded lettece for garnish

Cooking Instructions

    Preheat broiler in your oven.

    In a bowl combine tuna with all ingredients except tomato, cheese and lettece, mix well to combine.

    Evenly divide tuna salad on toasted english muffins, top each muffin with a slice of tomato, top tomato with a slice of cheddar and pepper jack cheese. Place under broiler to melt cheese, serve hot sprinkledwith shredded lettece.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
