English Muffin Avocado Sandwich

I'm not so keen on avocado on toast, but I really wanted to eat avocado and bread. I made it with various kinds of bread, and the English muffin version was by far the best! My younger brother's wife is from Peru, and she said that Peruvians would love this too!
The key is to add black pepper and garlic powder. They make all the difference!!!!
It's tasty enough with lemon juice and black pepper, but if you don't butter the bread, it's a lot tastier with a little mayonnaise.

Cooking Instructions

Cut the avocado in half and sprinkle lemon juice. If you aren't consuming the other half, leave the stone to prevent it from going black.

Mince the cut avocado with a knife, and sprinkle black pepper. Sprinkle garlic powder as well if you have it.

Coat the avocado mixture with potato starch, add the boiled shrimp and mayonnaise, and it's done. Top on the English muffins.
