Ingredients

  1. 1 packageschicken breasts; boneless or bone-in
  2. 1 packagespineapple preserves or crushed pineapple
  3. 1 cupcoconut milk or pineapple juice
  4. 1salt and pepper

Cooking Instructions

    Trim chicken breasts of fat. Marinate in coconut or pineapple.

  2. 2

    Pat dry. Season with salt and pepper. Grill or saute on each side to mark and caramelize the breasts. If you saute, add some more pineapple juice or coconut milk to the pan before the oven.

    Cover breasts with preserves or crushed pineapple.

    Finish in oven until thermometer reaches 165°.

    Variations; White pepper, guacamole, mango juice or puree, fresh pineapple puree, banana and peach puree, kiwi, guava, orange juice and zest

    Try using pork chops or tenderloin instead of chicken
