Ingredients

  1. 3 cuprhubarb, chopped
  2. 3 cupstrawberries, sliced
  3. 1/2 cupsugar
  4. 1 tbspcornstarch
  5. 1 tsplemon zest
  6. 1 cupflour
  7. 2 tbspsugar
  8. 1 1/2 tspbaking powder
  9. 1/4 tspcinnamon
  10. 1/4 tspsalt
  11. 1/4 cupbutter
  12. 1/4 cupmilk
  13. 1egg, beaten
  14. 1/2 tspvanilla
  15. 1 tbspsugar
  16. 1vanilla ice cream, optional

    Preheat oven at 350°F

    In bowl, mix rhubarb, strawberries, sugar, cornstarch and lemon zest. Let stand 30 minutes

    In another bowl, mix flour, sugar, baking powder, cinnamon and salt

    Cut in butter with a pastry blender or use finger tips

  5. 5

    Add egg, milk and vanilla. Stir in until just blended

  6. 6

    Pour strawberry/rhubarb mixture into 9x9 baking dish

  7. 7

    Spoon batter on top

    Sprinkle with sugar

  9. 9

    Bake 35-40 minutes.

    Let cool a bit before serving with ice cream
